Edo-meal
Like oatmeal or porridge, a hot breakfast made with edoes (a root vegetable, also called taro).
Ingredients: two large edoes, peeled, diced. 1 ripe banana, peeled and cut into small pieces. 1 tablespoon cinnamon. about 1 litre of water. a pinch of salt. 1 teaspoon of sunflower oil. ¼ cup apple butter (Vegan: called butter, but the only ingredient is apples!) ¾ cup soy milk, almond milk or any vegan milk.
In a large pot, bring water, edoes and cinnamon to boil. Add salt and oil. Reduce heat and cover allowing for a little steam to escape, until the edoes are well cooked and all the water is evaporated (about 15-20 minutes). Stir once in a while so the edoes don’t stick to the bottom of the pan. To test if the edoes are well-cooked push them lightly with a wooden spoon, if they split and look soft and cooked inside, they’re ready!
Set aside to cool about five minutes.
Add apple butter and milk. Mash mixture well. Add bananas and whisk everything together. If the mixture is too thick add a bit more milk.
Serve hot with fresh fruit and enjoy!
Serves 4.
Note: Instead of apple butter another sweetener can be used such as maple syrup. Edoes are naturally sweet, so perhaps it could be made without any sweetener at all as well, just the natural sweetness of the edoes and the bananas ;-)
