Eric came up with this recipe for very easy to make chocolate snacks. It's more of a do it as you go recipe so there are no exact measurements.
Ingredients: A lot of vegan cereal (any kind works really) 1/4-1/2 of a bag of vegan chocolate chips (make sure they're dark or bittersweet chocolate chips with no milk like the PC Brand) few spoons of peanut butter (optional) icing sugar (optional)
Process: 1) Melt the chocolate chips in the microwave or on the stove. 2) Pour the cereal, the chocolate, the peanut butter and the icing sugar into a plastic zip loc bag or a closed reusable container and shake it. Use enough cereal that it all gets evenly coated with a light layer of chocolate. 3) Pour the chocolate coated cereal into a pan lined with parchment paper and put it in the fridge for an hour or two to cool and harden.

and as a disclaimer (which somehow I forgot to mention!) if you do plan to use icing sugar make sure it's vegan. Make sure you are using a manufacturer like redpath or lantic that do not process the sugar through animal bone char and that the actual icing sugar is vegan and was not processed with egg (as they sometimes are).
If in doubt about the vegan-ness of your icing sugar, just don't use it. =)
