FALAFEL
Ingredients (Enough For 6 Persons):
Chickpeas 1 lb. Medium size Onion. 6 oz. green parsley. 6 teaspoons Cumin 1/2 teaspoon baking soda 1 teaspoon salt Hot green pepper "jalapinos" (1-2).
Directions:
1- Soak the chickpeas in water for about 6 to 8 hours. 2- Grind the chickpeas together with the onion, parceley, and jalapino pepper ( use a blender and don’t overload ). *** here i've personally found a food processor works better 3- Add 1/2 teaspoon of baking soda. 4- Add 1 teaspoon of salt. 5- mix until homogeneous. 6- Flatten the top of the mixture and add a thin layer of cumin on top (6 teaspoons). 7- Let the falafel mix set for about half an hour. 8- Deep fry the falafel, you need a falafel tool (you may use an ice cream scoop or any kitchen tool that can give a round shape to the falafel), and use a deep frying pan with enough vegetable oil. (oil should be hot, don’t know how many degrees but should be hot). 9- Use pita bread, serve w/ pickles, tomatoes, and cucumbers.
