This is a recipe for vegan tuna salad I found online. It was very very easy to make. The kelp is optional, I didn't put it in and it tasted like a non-fishy tuna but some of the posters who used the kelp said it gave it that fishy taste tuna is known for.
I imagine it'd be great on a sandwich but I bought some Pillsbury croissants (which are vegan) and wrapped this up in them along with some cheddar Daiya (a vegan cheese) to make little tuna and cheese dumplings like my mom made when I was a kid.
* 1(15 oz.) can chick-peas, drained (or 1.5 c. cooked)
* 1/4 cup vegan mayonnaise
* 1/3 cup minced celery
* 2.5 T. minced dill pickle (about 1 pickle-slice)
* 1/2 T. nutritional yeast
* 1 green onion, chopped
* 1 t. soy sauce
* 1/2 t. kelp powder (optional)
* pepper, to taste
In a medium bowl, mash the chick-peas coarsely with a fork. Mix in the remaining ingredients.
